It’s not BBQ but who doesn’t like fried chicken. It’s easy! If you have a burner attached to your grill, and a cast-iron pan you’re ready to dazzle your guests.

Ingredients

  • 1/4 t celery salt
  • 1/4 coriander
  • 1/2 t onion powder
  • 1/2 t garlic salt
  • 1/2 t red pepper flakes
  • 1/4 t basil
  • 1/4 t thyme
  • 1/2 t salt
  • 1/4 C flour
  • 2 eggs
  • 1/4 C milk

How To Make It

Step 1

Combine the eggs and milk in one pan for an egg wash and all the dry ingredients in another. Go outside (this is not an indoor project) . Use a cast-iron pan on your out-door burner and add cooking oil or shortening so the pan is less than half full. Heat the oil to 350°.

Step 2

Dredge the chicken parts in the wash and then dry ingredients. You can do this twice if you like a thicker crust. Place the chicken in the hot oil and then go chat with your guests. After about 10 minutes turn the chicken over. Cook for another 5 minutes or so Until the skin is golden). If you’re unsure about whether it’s cooked enough use a thermometer. I like this CDN thermometer but but use whatever you have. Just make sure the internal temperature is at least 165°.

Step 3

A few side dishes and you have a picnic!
Note: Please be careful with the hot oil! Keep your children away and NEVER heat oil without a thermometer!
